Mango sorbet with Arcticmed Omega-3
Ingredients (4 servings):
1. 600 g ripe mango flesh (about 2 large mangoes), peeled and diced
2. 1 dl granulated sugar (or ¾ dl liquid honey if you want to soften the taste)
3. 1 cup water
4. Juice of 1 lime (about 2 tablespoons)
5. 1 cm fresh ginger, finely grated (optional, gives a little spiciness)
6. A pinch of salt
7. ArcticMed Omega-3 liquid (follow the dosage on the package; a suggestion is about ½ teaspoon per serving – add just before serving)
8. Lime zest or mint leaves for garnish (optional)
Do this:
1. Make simple syrup: Bring water and sugar to a boil, stirring until sugar is completely dissolved. Remove from heat and let cool completely.
2. Blend the base: Place the mango, lime juice, grated ginger (if using), a pinch of salt and the cooled syrup in a blender. Blend until completely smooth. Taste and adjust with more lime if you want more acidity.
3. Strain (optional): For an extra creamy, silky texture, strain the puree through a fine-mesh strainer to remove any fibers. You can skip this if you want the full fruit flavor.
4. Refrigerate: Place the mix in the refrigerator for at least 1 hour, so that it is really cold before freezing.
5. Freezing:
- With an ice cream maker: Process the puree according to the machine's instructions until it has a sorbet consistency.
- Without a machine: Pour the puree into a shallow freezer-safe dish. Freeze for 30 minutes, remove and whisk with a fork to break up any ice crystals. Repeat every 30 minutes 3–4 times until the sorbet is smooth and frozen but still fluffy.
6. Serving with ArcticMed Omega-3: Take the sorbet out a few minutes before serving so that it softens slightly. Portion into bowls. Add ArcticMed Omega-3 just before eating: for example ½ teaspoon per serving, either drizzled on top and gently stirred in with a spoon or lightly swirled into the soft sorbet. Garnish with lime zest or a mint leaf if desired.
Tips & variations:
- Mask any aftertaste: If you find omega-3 has a slight "fishy" note, you can enhance the fruitiness with extra lime, a little passion fruit puree or a splash of coconut water in the base.
- Spice: A light sprinkle of chili flakes on top provides an exciting contrast to the sweetness.
- Alcohol variant: A splash of rum or vodka in the mix (before freezing) keeps the sorbet a little softer and gives it a grown-up touch.
Important to consider:
- Follow the dosage stated on the ArcticMed Omega-3 packaging and consult a healthcare provider if you are pregnant, breastfeeding, taking blood-thinning medication or have any other medical background.
- Add omega-3 to cold sorbet when serving; avoid heating so that the sensitive fatty acids do not break down.
- If you have a fish allergy, do not use fish-based omega-3 but choose an alternative (e.g. algae-based) and adjust the recipe accordingly.
